Mix the coating – which is only olive oil, balsamic vinegar, chives, salt and pepper. In a Dog Bowl (or mixing bowl) add a measured quantity of olive oil (normally two table spoons but depends on the size of dish) with half of this quantity of balsamic vinegar (normally one tablespoon). Then add the same amount of chives as the olive oil (two tablespoons), add salt and pepper to taste (if not sure add half a teaspoon of salt and quarter a teaspoon of pepper). NOW MIX with a spoon so all the ingredients are covered !!!
50 minutes before eating
STEP 3 PREPARING THE FOOD
To carry on with this recipe, wash all vegetables. Slice 2 x red peppers (any way you like), 2 x onions (any way you like), and slice a courgette (this should be cut lengthways in half, then lengthways in half again and then into 2 cm long pieces). Take your time with this preparation as it will not take long but does matter
40 minutes before eating
STEP 4 MIX
Now add the ingredients to the coating and mix with a spoon, now get your hands in and mix thoroughly until all the food is coated. Add these then to an oven proof dish and cover with foil.
35 minutes before eating
STEP 5 COOK
Once the oven has reached it’s temperature place the dish in for 20 minutes. After 20 minutes mix thoroughly with a wooden spoon and then cover again and place back in the oven for 15 minutes. After this time all should be ready to serve. IF you like your veg very soft then you may need a few more minutes but check the dish every 10 minutes until you are satisfied with the texture of the vegetables.
